Perfect Kale

When I am lazy, feeling the need for greens, am craving garlic and salt… I reach for my perfect kale! We usually have an abundance of kale varieties in our garden, so I reach for whichever variety needs to be picked.  

Super Simple Perfect Kale:

Sauté some onion and garlic in a little olive oil-don’t burn the garlic, throw it in right before the onions are done.  Toss in a bunch of kale (chopped with the stems removed). Add sea salt and pepper. Voila! Wait until it cooks down and serve with brown rice, or on its own!

Variation 1: Same as above, but leave out the salt and toss in a little low-sodium soy sauce and switch out toasted sesame oil for the olive oil.

Variation 2: Add a tablespoon of balsamic vinegar and 1 teaspoon of real maple syrup. Eat with roasted sweet potatoes. 

Tossed Kale Variation. This is a cold, raw version of my favorite kale!

One bunch of kale (chopped and stems removed), juice of 2 lemons, 1 tablespoon of extra virgin olive oil, sea salt and pepper, and dried cranberries. Massage the lemon juice and olive oil into the kale leaves then add some pumpkin or sunflower seeds for crunch. Done.
